The crushed malt is mixed with brewing water to make a mash, which is heated in a saccharifying pot, and its own hydrolase converts the insoluble starch into soluble maltose. In this process, all the nutrients in the malt will be dissolved into the brewing water. Next, the mash is filtered to separate the wort from the solid. Continuous level measurement is essential during the heating process.
